It’s about pairing wine with food — specifically, with the cuisine of a particular chef in a particular restaurant. After all, when you strip away all the fancy names, technical data and extreme adjectives, wine is really just a beverage that we drink with food. When customers ask me how I know which wines go well with which foods, my answer often disappoints. It’s not because I possess some secret text or oenological database. It’s because, whenever my chef creates a new dish, I sit in my office and taste it with dozens of wines, so that I can talk intelligently to customers about the virtues of various pairings. Much has been written about wine-and-food matching — no wine book is published without a whole appendix on the subject — but books and rules can only take you so far. There’s no substitute for tasting. That said, when entertaining at home, most people serve wine and food that they’ve never even tasted separately, let alone together.
Matchmaking: Right food, right wine
They’re the problem children born to the marriage of food and wine — the argumentative asparagus, bullying blue cheese and churlish hot chiles — we send to their rooms because they act up when there’s wine on the table. Some foods just aren’t all that wine-friendly, clashing like a pair of band cymbals think of bitter greens washed down with an oaky, tannic Cabernet Sauvignon. However, take comfort in knowing that there is a wine for every dish, and that like kids, all it takes are a few rules — guidelines, actually, because nothing is hard and fast in matching food and wine — for harmony to prevail.
I chose 10 of the most challenging ingredients to match with wine and ultimately found a great partner for each. Two basic principles came out of the experimentation.

9 tips for finding buyers on the European wine market
The Bordeaux government is launching a new initiative to match young winemakers looking to buy their first estate with properties owned by older winemakers approaching retirement. The plans come from the French national land agency, SAFER , together with the Ministry of Agriculture in the Gironde: the idea is to help the estimated 1, vineyard owners who are over 55 and do not have a succession plan in place. Many are forced into working longer, or are obliged to sell their estates to neighbours who then integrate the vines into their own chateaux, thus losing historic names.
The process of mapping existing owners who are approaching retirement age has already begun in Entre deux Mers, and will be extended next year over the whole Bordeaux region.
